On a whim, while I was in Trader Joe’s, I bought a bag of cubed butternut squash. I need to stop doing this because the bag sat in the fridge for a week and a half until I figured out what to do with it. Once I ran across the recipe for butternut mac ‘n cheese on How Sweet Eats’s blog, I knew exactly what I would use the squash for.
I thought it turned out delicious and I know it’s gotta be fairly healthy! I didn’t have any butter to brown :( so I omitted that. The only bad part is: there’s only two of us to eat it and it made SO MUCH! Thank goodness it handles being frozen/defrosted really well. Go make it. Now.
